Gyro Chicken Bowl with Coconut Yogurt Tzatziki
This gyro chicken bowl is light, full of flavor & perfect for meal prep. The dairy-free tzatziki sauce is a bright and dietary-need friendly alternative that’s great on any Mediterranean dish.

For The Chicken:
- 2 lbs. Chicken Thigh or 50/50 Breast & Thigh Meat
- 1 cup Unsweetened Coconut Yogurt
- 3 T Shawarma Spices 2 villajerada makes a great one or combine the below
- 1/2 tsp ground cinnamon
- 1/4 tsp cardamom or cloves
- 1 tsp ground coriander
- 1 1/2 tsp ground turmeric
- 1/2 tsp ground ginger
- 2 tsp smoked paprika
- 2 Tbsp ground cumin
- 1/8 tsp cayenne pepper
- 1/8 tsp black pepper
For The Salad:
- 2 Heirloom Tomatoes
- 1 Cucumber divided for the Tzatziki
- 1 Purple Carrot
- Large Handful of Herbs I used flat-leaf parsley, dill & mint
- Olive Oil Lemon Juice, Lemon Zest, Salt & Pepper, to taste
For the Coconut Yogurt Tzatziki:
- 1/2 cup Unsweetened Coconut Yogurt
- 1/4 cup Cucumber
- 1 Lemon Juiced & Zested
- 2 tsp Good Olive Oil
- 1 T Parsley & Dill Chopped
- Salt & Pepper to taste
Combine all chicken ingredients and let sit for at least 30 minutes.
Chop and dress all salad ingredients.
Cook chicken over the grill or a cast iron skillet on medium-high heat with a little but of avocado oil.
Let the chicken rest for 10 minutes before slicing.
Combine all tzatziki ingredients and adjust to taste.
Top the salad with the chicken and tzatziki immediately before serving and enjoy!
