Buffalo Chickpea Wrap
Buffalo chickpea wraps with my oil-free, dairy-free & high-protein dressing will be a meal prep staple.

For the Salad:
- 1 15 ounce can chickpeas, rinsed and drained
- 1 stalk celery diced
- 1/2 cup shredded carrot
- 1/4 cup green bell pepper diced
- 3 tablespoons finely diced red onion
For the Dressing:
- ¼ cup dairy-free unsweetened yogurt
- 3-4 tablespoons buffalo sauce
- 1 tablespoon hot sauce
- 1 tablespoon fresh lemon juice
For the wraps:
- Green cabbage or collard leaves
- 1 avocado sliced
To Assemble the wrap:
lay 3 large green cabbage or collard leaves on a piece of parchment paper, top with avocado and 1/2-3/4 cup buffalo chickpea mixture.
Wrap the sandwich like a burrito, tucking in the sides as you go.
