Lemon Coconut Energy Bites

My Lemon Coconut Energy Bites are my new favorite way to get in my collagen every day! These bites are made without gluten, dairy & refined-sugar.

Ingredients
  

  • 2 cups Shredded Coconut plus additional for rolling
  • 2/3 cup Almond Flour
  • 4 tbsp Lemon Collagen Peptides
  • 1/2 cup Maple Syrup
  • 4 tbsp Coconut Oil melted
  • 2 tbsp Sun Butter
  • 1-2 tsp Lemon Juice fresh
  • 1/4 tsp Sea Salt

Instructions
 

  • Combine the almond flour, shredded coconut, and collagen in a medium bowl and mix.
  • Stir in the maple syrup, coconut oil, sun butter, lemon juice & sea salt and stir until well combined.
  • Prepare a plate lined with parchment paper. Begin rolling the mixture into balls (you’ll have about 15) and place them on the plate.
  • Roll in extra shredded coconut.
  • Chill in the fridge for 1-2 hours or until solidified. Eat chilled and enjoy! Keep sealed in the fridge for up to a week or in the freezer for up to 6 months.
