Banana Cornbread Streusel Muffins

Ingredients
  

For the Banana Cornbread:

  • 2 cups paleo or gf flour
  • 2 cups cornmeal
  • 2 cups almond milk
  • 2 banana or 3 small bananas
  • 1 1/3 cup maple syrup
  • 2/3 cup avocado oil
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt

For the Streusel:

  • 1/4 cup coconut sugar
  • 2 tablespoons cinnamon
  • 1/3 cup rolled oats

For the Icing:

  • 1/4 cup powdered sugar of choice
  • 1 tablespoon almond milk
  • 1/2 teaspoon vanilla

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Grease a 12-muffin pan. Combine flour, cornmeal, almond milk, bananas, maple syrup, butter or oil, baking powder, and salt together in a bowl until batter is smooth; pour half of the batter into the prepared muffin pan.
  • Combine the streusel ingredients and 2/3 of the mixture across the 12 muffins.
  • Divide the remaining batter among the muffin pan and sprinkle the remaining streusel on top.
  • Bake for 20-25 minutes until a toothpick comes out clean. once cooled, drizzle with icing and enjoy!
  • Store at room temperature for 3 days or in the fridge for up to one week.
