For the Orange Sauce:
In a medium pot, whisk all sauce ingredients minus the corn starch. Bring to a quick boil, whisk and let simmer.
In a small bowl, whisk corn starch and 1/4 of water. Add to the sauce mixture and let simmer for 7-8 minutes until thickened.
For the Chicken:
Whisk dry ingredients in a small bowl. Whisk eggs in a second small bowl.
Dip chicken pieces in the flour, then egg and then back into the flour mixture. Place on plate.
In a large pan with high walls, heat the avocado oil on medium high heat. If the oil splatters, it’s too hot. Do not leave the oil unattended.
Fry the chicken bites until golden and crispy Place chicken on a paper-towel-lined plate.In another skillet or bowl, mix the chicken with orange sauce.
Sprinkle the chicken with sesame seeds and scallions. Serve with cauliflower rice or regular rice!
