Za’atar Chicken Schnitzel Salad
By popular demand from both Real Housewives & Food Baes, here is THE famous (& grain-free!) chicken schnitzel with rainbow Israeli salad!
Ingredients
For the Salad:
- 2 heads romaine lettuce chopped
- 4 cups rainbow cherry tomatoes quartered
- 3 handfuls fresh mint minced
- 3 handfuls curly parsley minced
- 1 large pomegranate de-seeded
- 2 cups turmeric lentil crackers or pita chips crushed
For the Dressing:
- 1/4 cup tahini
- 1/4 cup good olive oil
- 1/4 cup unsweetened coconut yogurt
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/4 tsp corriander
- 1 lemon juiced
- 2 tsp honey
- salt & pepper to taste
For the Grain-Free Chicken Tenders:
- 2 lbs. chicken breast
- 3 cups almond flour
- 1/2 cup coconut flour
- 2 cups GF flour of choice
- 1/4 cup za’atar
- 6 eggs
- avocado oil for pan frying
- salt & pepper for the eggs, flour, and almond flour
Instructions
- Cut the chicken breast into 3” pieces.
- Place the almond flour, coconut flour & za’atar into one bowl, whisked eggs into a second bowl and gf flour into a third bowl.
- Salt & pepper each of the three bowls.
- Coat the chicken pieces in the GF flour, then egg, then almond flour mixture.
- Pan fry in avocado oil until crispy.
- Place the chicken on a paper towel, and immediately sprinkle with za’atar and salt.
- In a large salad bowl, combine the salad ingredients.
- In a small bowl, whisk together the dressing ingredients.
- Mix the dressing into the salad immediately before serving and top each plate with the chicken schnitzel.
