Caramelized Date & Citrus Salad with Vegan Feta & Pomegranate Vinaigrette

The oven-roasted dates get perfectly caramelized and crispy, complementing the creamy vegan feta and crunchy seeds & nuts!
Ingredients
- 2 cups arugula
- 2 cups baby kale
- pitted medjool dates
- feta or vegan feta I like Trader Joe’s brand
- 1 carra carra orange sliced
- 1 tbsp pumpkin seeds
For the Toasted Turmeric Honey Almonds (8 servings):
- ½ cup unsalted raw almonds chopped
- ½ tsp turmeric
- ¼ tsp cayenne optional for heat
- 1 tbsp honey
- 1 tsp olive oil
For the Pomegranate Balsamic Dressing 8 servings:
- ⅓ cup balsamic vinegar
- ¼ cup pomegranate juice
- 3 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tsp honey
- 1 tsp garlic powder
- 1 tsp oregano
- ¼ cup pomegranate seeds
- Salt and pepper
Instructions
- Slice the medjool dates in quarters and broil on parchment paper for 3 minutes until slightly crispy and caramelized.
- Toss the almonds in the honey, cayenne (optional), olive oil & turmeric.
- Lay almonds on a lined baking sheet and bake at 350F for 10-12 minutes, until the dates are glistening but still a little soft and the nuts are dry and toasty.
- Combine all dressing ingredients and set aside.
- Assemble salad with arugula, dates, vegan feta, carra carra orange, pumpkin seeds & honey turmeric almonds.
- Top with Pomegranate Balsamic Dressing.
- Enjoy!
