Salted Caramel Collagen Fudge Bars

Ingredients
- 1/3 cup Vital Proteins Salted Caramel Collagen Peptides
- 1 cup Creamy Coconut or Cashew Butter natural and unsweetened
- 1/2 cup Coconut Oil
- 1/2 tsp Vanilla Extract
- 1/2 cup Monk Fruit or Maple Syrup
- 1/3 cup Shaved Coconut toasted
- Dark Chocolate for drizzling
- Flaky Sea Salt for sprinkling
Instructions
- Line an 8×8 baking dish with parchment paper.
- Melt the coconut or cashew butter and coconut oil over medium-low heat in a medium-sized sauce pan.
- Stir until melted, then stir in the vanilla extract.Whisk in the sweetener and collagen until well combined and smooth.
- Pour the fudge mixture into a lined loaf pan, top with toasted shaved coconut and freeze until set, about 1 hour.
- Once set, cut into 6 bars and drizzle with dark chocolate and a sprinkle of flaky sea salt.
