Summer Salad with Creamy Strawberry Poppyseed Dressing

my favorite summer salad with a creamy (dairy-free!) strawberry poppyseed dressing. It’s high-protein, oil free, #GF & #DF

Ingredients
  

For the Dressing:

  • 1 cup fresh strawberry slices
  • 2 Tablespoons dijon mustard or red wine vinegar
  • 1 Tablespoon lemon juice plus zest of half a lemon
  • 2 Tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 fresh mint leaves plus additional for the salad
  • ¼ cup unsweetened dairy-free yogurt
  • 1 Tablespoon poppy seeds

For the Salad:

  • 2 cans tuna or 2 chicken breast
  • 1/2 red onion thinly shaved
  • 1/2 cup chopped almonds pumpkin seeds or pistachios
  • 2 cups diced fresh fruit I love mango/blueberries, strawberries, peach, nectarine & apricot
  • 6 large handfuls mixed greens

Instructions
 

  • Blend all dressing ingredients, minus the poppy seeds. Once creamy, mix in the poppyseeds. Combine all salad ingredients and dress immediately before serving. Store extra dressing in the fridge. Enjoy!
