Sweet & Spicy Wild Salmon with Bright Arugula Salad
Add this recipe to your salmon rotation to mix up an easy meal prepped lunch or dinner. The salmon spice rub is the perfect combination of sweet, from the cinnamon and fruit juices, and spicy, from the chili powder. The fresh and bright arugula salad ties the entire meal together for one satisfying dish.
Ingredients
For The Salmon:
- 2 1/2 lb. fillets wild salmon
- 1 cup apple or pineapple juice
- 1/4 cup lemon juice
- 1 T cinnamon
- 1 T chili powder
- 1 T cumin
- 1 t brown or coconut sugar
For The Salad:
- 4 handfuls arugula
- 2 small handful mint and/or basil
- 2 T pumpkin seeds
- 1/4 purple onion thinly shaved
- 1/2-1 cup fresh fruit I love apricot, peach and/or mango, thinly shaved
- 1 avocado thinly sliced
- Microbasil for garnish
For The Dressing:
- 2 T cup lemon juice
- 1/4 c olive oil or unsweetened dairy-free yogurt
- 1 T Dijon mustard
- 1 garlic clove minced
- 1 tsp honey
- Sea salt pepper & cumin, to taste
Instructions
- Preheat oven to 400F.
- In a shallow dish, marinate the salmon in the pineapple or apple and lemon juice for 15 minutes, skin side up.
- Line a baking tray and combine the remaining salmon ingredients into a rub.
- Drain the salmon and coat with an even layer of the rub.
- Bake for ~12 minutes, being careful to not overcook the salmon.
- Combine salad ingredients and whisk dressing ingredients.
- Top the salad with the salmon and dress immediately before serving.
