1/2cupcoconut sugar
1tspbaking soda
1tspbaking powder
pinchof salt
2tspturmericfor color
1/2cupunsweetened applesauce
1/2cupunsweetened plant-based milk
1/4cupcoconut oilmelted
1large egg
For the Vanilla Protein Custard Filling
4scoops vanilla proteinI love @kos & @sproutlivingbrands
1/4cupunsweetened coconut yogurt
1tspvanilla extract
Plant milkto loosen the filling if needed
Instructions
Preheat oven to 325°F.
Line an eclair tray with liners or spray with non-stick spray. Combine oat flour, coconut sugar, baking powder, baking soda, turmeric and salt.
In a separate bowl combine applesauce, almond milk, coconut oil, egg and vanilla.
Mix wet into dry and divide among 8 molds in the baking tray.
Bake for ~10 minutes, or until just cooked through but not yet browning.
As the Twinkies cool, combine all custard ingredients. Fill a piping bag with an injector tip and (once the Twinkies are cool) inject each Twinkie on the bottom three times for an even filling. Enjoy!
