Healthy High-Protein Twinkies

  • 2 cups oat flour or any flour works just the color of the batter might differ (GF flour looks the most authentic)
  • 1/2 cup coconut sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
  • 2 tsp turmeric for color
  • 1/2 cup unsweetened applesauce
  • 1/2 cup unsweetened plant-based milk
  • 1/4 cup coconut oil melted
  • 1 large egg

For the Vanilla Protein Custard Filling

  • 4 scoops vanilla protein I love @kos & @sproutlivingbrands
  • 1/4 cup unsweetened coconut yogurt
  • 1 tsp vanilla extract
  • Plant milk to loosen the filling if needed


  • Preheat oven to 325°F.
  • Line an eclair tray with liners or spray with non-stick spray. Combine oat flour, coconut sugar, baking powder, baking soda, turmeric and salt.
  • In a separate bowl combine applesauce, almond milk, coconut oil, egg and vanilla.
  • Mix wet into dry and divide among 8 molds in the baking tray.
  • Bake for ~10 minutes, or until just cooked through but not yet browning.
  • As the Twinkies cool, combine all custard ingredients. Fill a piping bag with an injector tip and (once the Twinkies are cool) inject each Twinkie on the bottom three times for an even filling. Enjoy!
