In a large bowl, combine the meatball ingredients and form 12 meatballs.
Preheat a skillet on medium-high heat with avocado oil and cook the meatballs until golden.
Remove the meatballs from the skillet and add the sliced vegetables. Sauté the vegetables for 3-4 minutes.
In a medium pan, bring the peanut sauce ingredients to a simmer.
Whisk for 5 minutes until smooth and slightly thickened.
Add the peanut sauce and turkey meatballs to the skillet. Mix and serve with peanuts, scallions and cilantro.
