Turkey Meatballs with Peanut Sauce & Sautéed Veggies
Ingredients
For the Meatballs:
- 1 lb. Lean Ground Turkey
- 1 Egg
- 1/2 cup Almond Flour
- 1/4 cup Paleo Flour
- 1/4 cup Scallions chopped
- 1/2 White Onion diced
- 1/4 cup Finely-Diced Cilantro
- 1 Red Chili seeded and finely diced
- 4 Cloves Garlic minced
- 1 tablespoon Freshly-Grated Ginger
- 1/2 teaspoon Sea Salt
- Black Pepper
- Avocado Oil for pan-frying
For the Peanut Sauce:
- 1 15 oz. Can Light Coconut Milk
- 1/2 cup Creamy Natural Peanut Butter
- 2 tablespoons Coconut Aminos
- 2 tsp Freshly-Grated Turmeric
- 1 tablespoon Hot Sauce
- 1 tablespoon Coconut Sugar
For the Veggie Sauté:
- 1 Carrot julienned
- 1 Red Bell Pepper julienned
- 1/2 White Onion thinly sliced
- 1 Yellow Bell Pepper julienned
For the Garnish:
- Chopped Roasted Peanuts
- Diced Scallions
- Fresh Cilantro
Instructions
- In a large bowl, combine the meatball ingredients and form 12 meatballs.
- Preheat a skillet on medium-high heat with avocado oil and cook the meatballs until golden.
- Remove the meatballs from the skillet and add the sliced vegetables. Sauté the vegetables for 3-4 minutes.
- In a medium pan, bring the peanut sauce ingredients to a simmer.
- Whisk for 5 minutes until smooth and slightly thickened.
- Add the peanut sauce and turkey meatballs to the skillet. Mix and serve with peanuts, scallions and cilantro.
