Turkey Meatballs with Peanut Sauce & Sautéed Veggies

Ingredients
  

For the Meatballs:

  • 1 lb. Lean Ground Turkey
  • 1 Egg
  • 1/2 cup Almond Flour
  • 1/4 cup Paleo Flour
  • 1/4 cup Scallions chopped
  • 1/2 White Onion diced
  • 1/4 cup Finely-Diced Cilantro
  • 1 Red Chili seeded and finely diced
  • 4 Cloves Garlic minced
  • 1 tablespoon Freshly-Grated Ginger
  • 1/2 teaspoon Sea Salt
  • Black Pepper
  • Avocado Oil for pan-frying

For the Peanut Sauce:

  • 1 15 oz. Can Light Coconut Milk
  • 1/2 cup Creamy Natural Peanut Butter
  • 2 tablespoons Coconut Aminos
  • 2 tsp Freshly-Grated Turmeric
  • 1 tablespoon Hot Sauce
  • 1 tablespoon Coconut Sugar

For the Veggie Sauté:

  • 1 Carrot julienned
  • 1 Red Bell Pepper julienned
  • 1/2 White Onion thinly sliced
  • 1 Yellow Bell Pepper julienned

For the Garnish:

  • Chopped Roasted Peanuts
  • Diced Scallions
  • Fresh Cilantro

Instructions
 

  • In a large bowl, combine the meatball ingredients and form 12 meatballs.
  • Preheat a skillet on medium-high heat with avocado oil and cook the meatballs until golden.
  • Remove the meatballs from the skillet and add the sliced vegetables. Sauté the vegetables for 3-4 minutes.
  • In a medium pan, bring the peanut sauce ingredients to a simmer.
  • Whisk for 5 minutes until smooth and slightly thickened.
  • Add the peanut sauce and turkey meatballs to the skillet. Mix and serve with peanuts, scallions and cilantro.
