Everyone is posting “marry me” chicken recipes, but this recipe is what I call “DIVORCE ME CHICKEN” because after trying this meatball recipe, you’ll realize the true love-of-your-life is actually just really good food.
In a medium bowl, combine the chicken meatball ingredients. Form into 2” meatballs. Sauté the meatballs, over medium heat, in a skillet with a little olive oil, so coat the pan.
In a medium bowl, combine the salad ingredients. Taste and season, according to preference.
In a small bowl, combine with tzatziki ingredients. Taste and season, according to preference.
To plate, spoon the tzatziki on the plate (as shown) and top with the salad and chicken meatballs. Garnish with a drizzle of good olive oil, fresh whole mint leaves, fresh parsley, and lemon zest and/or juice.
