“Divorce Me Chicken Meatballs”

Everyone is posting “marry me” chicken recipes, but this recipe is what I call “DIVORCE ME CHICKEN” because after trying this meatball recipe, you’ll realize the true love-of-your-life is actually just really good food.

Ingredients
  

For the Chicken Meatballs:

  • 1 pound Ground Chicken
  • 1 large Egg
  • 1/2 cup Coconut Flour
  • 1/4 cup Hemp Seeds or Almond Flour
  • 1/4 cup Nutritional Yeast
  • 2 tablespoons Olive Oil
  • 1 tsp Cumin
  • 1 1/2 tbsp Fresh Mint minced
  • 1 1/2 tbsp Fresh Parsley minced
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper

For the Carrot & Cucumber Ribbon Salad:

  • 5 medium Rainbow Carrots ribboned
  • 2 medium Cucumbers ribboned
  • 2-3 tbs Fresh Herbs of Choice minced, *see notes
  • 1/2-1 Fresh Lemon juiced
  • 1 tbsp Good Olive Oil
  • Sea Salt & Black Pepper to taste

For the Dairy-Free Tzatziki:

  • 1 cup Plain Unsweetened Dairy-Free Yogurt
  • 1/4 cup Cucumber finely-diced
  • 2-3 tbs Fresh Herbs of Choice minced, *see notes
  • 1/2 Lemon juiced
  • 1/2 tsp Garlic Powder
  • Sea Salt & Black Pepper to taste

Instructions
 

  • In a medium bowl, combine the chicken meatball ingredients. Form into 2” meatballs. Sauté the meatballs, over medium heat, in a skillet with a little olive oil, so coat the pan.
  • In a medium bowl, combine the salad ingredients. Taste and season, according to preference.
  • In a small bowl, combine with tzatziki ingredients. Taste and season, according to preference.
  • To plate, spoon the tzatziki on the plate (as shown) and top with the salad and chicken meatballs. Garnish with a drizzle of good olive oil, fresh whole mint leaves, fresh parsley, and lemon zest and/or juice.
  • Enjoy!

*I used dill, parsley, and mint for the fresh herbs, but you may omit or add any you like.
