Banana Cornbread Streusel Muffins
Banana Bread. Cornbread. Coffee Cake Streusel. Mic Drop.
Ingredients
For the Banana Cornbread:
- 2 cups paleo or gf flour
- 2 cups cornmeal
- 2 cups almond milk
- 2 banana or 3 small bananas
- 1 1/3 cup maple syrup
- 2/3 cup avocado oil
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
For the Streusel:
- 1/4 cup coconut sugar
- 2 tablespoons cinnamon
- 1/3 cup rolled oats
For the Icing:
- 1/4 cup powdered sugar of choice
- 1 tablespoon almond milk
- 1/2 teaspoon vanilla
Instructions
- Preheat the oven to 350 degrees F.
- Grease a 12-muffin pan. Combine flour, cornmeal, almond milk, bananas, maple syrup, butter or oil, baking powder, and salt together in a bowl until batter is smooth; pour half of the batter into the prepared muffin pan.
- Combine the streusel ingredients and 2/3 of the mixture across the 12 muffins.
- Divide the remaining batter among the muffin pan and sprinkle the remaining streusel on top.
- Bake for 20-25 minutes until a toothpick comes out clean. once cooled, drizzle with icing and enjoy!
- Store at room temperature for 3 days or in the fridge for up to one week.
