Buffalo Chickpea Wrap

Buffalo chickpea wraps with my oil-free, dairy-free & high-protein dressing will be a meal prep staple.

Ingredients
  

For the Salad:

  • 1 15 ounce can chickpeas, rinsed and drained
  • 1 stalk celery diced
  • 1/2 cup shredded carrot
  • 1/4 cup green bell pepper diced
  • 3 tablespoons finely diced red onion

For the Dressing:

  • ¼ cup dairy-free unsweetened yogurt
  • 3-4 tablespoons buffalo sauce
  • 1 tablespoon hot sauce
  • 1 tablespoon fresh lemon juice

For the wraps:

  • Green cabbage or collard leaves
  • 1 avocado sliced

Instructions
 

  • Combine all buffalo chickpea salad ingredients.
  • The salad may be made up to three days ahead of time and gets better as it sits in the fridge!

To Assemble the wrap:

  • lay 3 large green cabbage or collard leaves on a piece of parchment paper, top with avocado and 1/2-3/4 cup buffalo chickpea mixture.
  • Wrap the sandwich like a burrito, tucking in the sides as you go.
  • Enjoy!
