Chef Bae’s Micro-Chopped Salad

The chopping is worth the effort & this salad trend is worth the hype! Here's my take for spring.

Ingredients
  

  • 6 cups Spinach micro-chopped
  • 6 cups Arugula micro-chopped
  • 1 can Hearts of Palm micro-chopped
  • 3 Endives (small) micro-chopped
  • 1 Fennel Bulb with Fronds micro-chopped
  • Vegan Parmesan micro-chopped
  • Cara Cara Orange micro-chopped
  • 1/4-1/2 Red Onion micro-chopped
  • 1/4 cup Hemp Seeds
  • 1/4 cup Sunflower Seeds

For the Dressing:

  • 2 Tbsp Dijon
  • 2 Tbsp Rice wine vinegar
  • Sea Salt & Black Pepper to taste
  • 1/4 cup Olive Oil
  • 1/2 tsp Turmeric
  • Honey or Agave to taste
