Healthy Peanut Butter Cups
These are healthiest peanut butter cups I’ve seen online & the peanut butter filling is 🔥! They are also high-protein & sugar free, so have 4!
Ingredients
- 1 cup dark chocolate of choice
- 1 tsp coconut oil
- 3/4 cup sugar free powdered peanut butter or 50:50 peanut butter powder:vanilla protein powder
- 1/3 cup seeds of choice I used chia, flax, sunflower and pumpkin
- 1/4 cup almond milk
- 2 tsp sweetener of choice I used stevia (optional)
Instructions
- Melt half of the chocolate and coconut oil in a double boiler.
- Line 6 cupcake tins with muffin liners.
- Add 2 tsp of chocolate into each muffin liner and spread the chocolate 3/4 the way up the sides.
- Freeze the muffin cups for 2 minutes and repeat the chocolate-coating process 3/4 the way up each muffin liner.
- In a bowl, combine remaining ingredients. The texture should be similar to thick peanut butter. Add additional almond milk if needed.
- Add 1.5 tablespoons of filling into each of the 6 muffin cups.
- Smooth out the peanut butter filling and melt the remaining chocolate and coconut oil.
- Top each cup with remaining melted chocolate and freeze for 15 minutes.
