Lemon Coconut Energy Bites
My Lemon Coconut Energy Bites are my new favorite way to get in my collagen every day! These bites are made without gluten, dairy & refined-sugar.
Ingredients
- 2 cups Shredded Coconut plus additional for rolling
- 2/3 cup Almond Flour
- 4 tbsp Lemon Collagen Peptides
- 1/2 cup Maple Syrup
- 4 tbsp Coconut Oil melted
- 2 tbsp Sun Butter
- 1-2 tsp Lemon Juice fresh
- 1/4 tsp Sea Salt
Instructions
- Combine the almond flour, shredded coconut, and collagen in a medium bowl and mix.
- Stir in the maple syrup, coconut oil, sun butter, lemon juice & sea salt and stir until well combined.
- Prepare a plate lined with parchment paper. Begin rolling the mixture into balls (you’ll have about 15) and place them on the plate.
- Roll in extra shredded coconut.
- Chill in the fridge for 1-2 hours or until solidified. Eat chilled and enjoy! Keep sealed in the fridge for up to a week or in the freezer for up to 6 months.
