The Glowing Skin Salad
My Glowing Skin Salad is on meal prep repeat at least once per month. It’s full of vitamin C and antioxidant/anti-inflammtory ingredients to glow from the inside out. Plus, my Thai peanut dressing is oil-free & super high in protein.
Ingredients
- 1/2 head red cabbage chopped
- 1/2 cup carrots sliced
- 1 yellow bell pepper chopped
- 1 red bell pepper chopped
- 3 green onions chopped
- 1 small handful of mint parsley, basil and/or cilantro
- 1/2 cup roasted cashews chopped
- Edible flowers optional
Ginger Peanut Dressing:
- 1/2 cup dairy-free unsweetened yogurt
- ⅓ cup sugar-free powdered peanut butter
- 1 lime juiced and zested
- 3 teaspoons ginger freshly-grated
- 1 tsp garlic freshly grated
- 2 tablespoons rice vinegar
- 1 tsp red chili paste
- Almond milk to thin
- Salt & pepper to taste
Instructions
- In a medium bowl, combine all salad ingredients.
- In a small bowl, whisk together all dressing ingredients.
- Dress immediately before serving.
- Enjoy!
