The Glowing Skin Salad

My Glowing Skin Salad is on meal prep repeat at least once per month. It’s full of vitamin C and antioxidant/anti-inflammtory ingredients to glow from the inside out. Plus, my Thai peanut dressing is oil-free & super high in protein.

Servings 1 serving

Ingredients
  

  • 1/2 head red cabbage chopped
  • 1/2 cup carrots sliced
  • 1 yellow bell pepper chopped
  • 1 red bell pepper chopped
  • 3 green onions chopped
  • 1 small handful of mint parsley, basil and/or cilantro
  • 1/2 cup roasted cashews chopped
  • Edible flowers optional

Ginger Peanut Dressing:

  • 1/2 cup dairy-free unsweetened yogurt
  • cup sugar-free powdered peanut butter
  • 1 lime juiced and zested
  • 3 teaspoons ginger freshly-grated
  • 1 tsp garlic freshly grated
  • 2 tablespoons rice vinegar
  • 1 tsp red chili paste
  • Almond milk to thin
  • Salt & pepper to taste

Instructions
 

  • In a medium bowl, combine all salad ingredients.
  • In a small bowl, whisk together all dressing ingredients.
  • Dress immediately before serving.
  • Enjoy!
