Healthy High-Protein Twinkies
Ingredients
- 2 cups oat flour or any flour works just the color of the batter might differ (GF flour looks the most authentic)
- 1/2 cup coconut sugar
- 1 tsp baking soda
- 1 tsp baking powder
- pinch of salt
- 2 tsp turmeric for color
- 1/2 cup unsweetened applesauce
- 1/2 cup unsweetened plant-based milk
- 1/4 cup coconut oil melted
- 1 large egg
For the Vanilla Protein Custard Filling
- 4 scoops vanilla protein I love @kos & @sproutlivingbrands
- 1/4 cup unsweetened coconut yogurt
- 1 tsp vanilla extract
- Plant milk to loosen the filling if needed
Instructions
- Preheat oven to 325°F.
- Line an eclair tray with liners or spray with non-stick spray. Combine oat flour, coconut sugar, baking powder, baking soda, turmeric and salt.
- In a separate bowl combine applesauce, almond milk, coconut oil, egg and vanilla.
- Mix wet into dry and divide among 8 molds in the baking tray.
- Bake for ~10 minutes, or until just cooked through but not yet browning.
- As the Twinkies cool, combine all custard ingredients. Fill a piping bag with an injector tip and (once the Twinkies are cool) inject each Twinkie on the bottom three times for an even filling. Enjoy!
