The fluffiest low-carb blueberry pancakes
A delicious and satisfying take on a breakfast classic! This recipe is only four ingredients and over 20g of protein per serving!
- 2 ripe Bananas
- 6 room temp egg whites
- 2 scoops vanilla protein powder
- Splash of vanilla extract optional
- Mash banana and whisk in protein powder and vanilla,
- if using. Whip egg whites until stiff peaks form. Fold in banana mixture into the egg whites.
- Cook on a greased skillet on medium heat, adding blueberries before flipping half-way through.
- Add the Use a lid for more even cooking. Enjoy!
