The fluffiest low-carb blueberry pancakes

A delicious and satisfying take on a breakfast classic! This recipe is only four ingredients and over 20g of protein per serving!

Ingredients
  

  • 2 ripe Bananas
  • 6 room temp egg whites
  • 2 scoops vanilla protein powder
  • Splash of vanilla extract optional
  • Blueberries

Instructions
 

  • Mash banana and whisk in protein powder and vanilla,
  • if using. Whip egg whites until stiff peaks form. Fold in banana mixture into the egg whites.
  • Cook on a greased skillet on medium heat, adding blueberries before flipping half-way through.
  • Add the Use a lid for more even cooking. Enjoy!
